Iced Almond Sugar Cookies

Cook's notes: These cookies are always a hit and the main comment I get is that they are too pretty to eat! They are soft and thick and the almond flavor gives them a unique touch that everyone raves about. These are a must have at the Christmas table!


1 cup sugar
2 sticks butter (slightly cool)
1 egg
3/4 tsp vanilla
1/2 tsp almond extract
3 cups flour
2 tsp baking powder

Royal Icing
4 cups powdered sugar
3 tablespoons meringue powder
1/2 teaspoon almond extract
1/2 - 3/4 cup warm water


For cookies:

Cream butter and sugar. Add egg and flavorings and mix well. Add dry ingredients slowly and mix until well combined. No need to refrigerate. Knead on lightly floured surface and roll out 3/4" thick. Use Christmas cutter shapes and bake for 10 min or until lightly brown at the edges at 350 degrees.

For icing:

Place all ingredients in a bowl and combine. Mix on medium until thick and peaks form, app. 7 minutes. Pipe outline on cookies. Then add water 1 tsp at a time to icing until it is a syrup consistency. Fill in outline with this "flood" icing. Create fabulous designs with different colors and toothpicks! Let dry overnight, do not cover. Cookies will not dry out.
